Reunionese cuisine tells the story of the island: African, Malagasy, Indian, Chinese and European influences blend into generous, fragrant dishes. Here are the specialities to try during your stay in Saint-Denis.
Cari, the king of Reunionese dishes
Cari (or carry) is a slow-cooked dish of onions, garlic, tomatoes, turmeric (called “safran” on the island) and ginger. Chicken, fish, prawns or smoked pork: it comes in endless variations and is served with rice, “grains” (lentils or beans) and a rougail.
Rougail saucisse
Another great classic: sausages simmered in a spicy tomato sauce. Not to be confused with the rougails served on the side, condiments made with tomato, green mango or lemon, often very hot.
Snacks: samosas, bouchons and bonbons piment
- Samosas: small fried triangles filled with meat, fish, vegetables or cheese, inherited from Indian cuisine.
- Bouchons: steamed dumplings of Chinese origin, often served with soy sauce.
- Bonbons piment: spicy split-pea fritters, perfect with a drink.
Achards
Finely cut vegetables (cabbage, carrots, green beans) marinated with turmeric and spices: achards go with many dishes and are also sold in jars at the market.
Fruit and sweets
- Victoria pineapple: small, very sweet and famous across the region.
- Lychees: the season peaks at the end of the year, around Christmas.
- Mangoes, passion fruit and guavas, depending on the season.
- Gâteau patate: a moist sweet-potato cake, often flavoured with vanilla.
Rhum arrangé
Rum infused with fruit, spices or Reunion vanilla: every family has its own recipe. To be enjoyed in moderation.
